Head of Food Science

Background:

Melt&Marble (meltandmarble.com) is a start-up company on a mission to boost the growth of the plant-based food industry by providing it with the best and tastiest fats, for both consumers and the planet. We do this by using precision fermentation. By engineering microbial metabolism, we can dictate the structure and properties of the fats that our microbes are producing, allowing us to mimic any fat structure, as well as create completely new and better fats. This results in sustainable vegan fats that can mimic the sensory experience of animal fats, bridging the taste gap between animal-based foods and plant-based alternatives.


Position summary:

We are looking for a motivated and experienced food scientist to work on application development for Melt&Marble’s fats. As Head of Food Science, you will be responsible for building our food science team, including the recruitment and supervision of additional food scientists.

Our ideal candidate should have a strong track record in development and formulation of food products, exceptional organizational skills, and a passion for using science & technology to solve tough challenges. The candidate should also be comfortable working in the dynamic environment of a start-up company, troubleshooting challenging projects, and meeting tight deadlines.

Occasionally, some activities may require working outside of standard working hours. The position might require travel within Sweden and abroad.


Responsibilities and tasks:

  • Build and manage the product development program at Melt&Marble, including recruitment and supervision of personnel, and setting up a food lab

  • Coordinate relevant collaborations with academia and CROs for food product development

  • Define target product specifications

  • Drive product formulation and applications development

  • Develop regulatory strategies for submissions to regulatory agencies, coordinate and manage regulatory activities

  • Keep track of innovation and potential IP and assist in securing relevant IP rights

  • Coordinate with the other teams in the company to ensure delivery on major organizational milestones


Required qualifications:

  • Msc/PhD in Food Science, Food Technology, or another relevant subject

  • >6 years of relevant technical experience in developing and formulation of food products, preferably meat analogues, and preferably in a commercial setting

  • Strong understanding of ingredient functionality and flavour chemistry

  • Solid understanding of lipid chemistry and the structure-function relationship for fats & oils in food applications

  • Excellent organizational and project management skills


Bonus points:

  • Work experience with fats and oils in various food applications

  • Experience with advanced food/fat analytics (e.g. melting profile, flavour/aroma profiling, etc.)

  • Experience with designing and conducting sensory testing

  • Good understanding of current food regulations (Novel Foods, GRAS, etc.)

  • Experience with development of intellectual property
